If 2012 could be described by one vegetable, it would have to be the avocado. I don’t know why but I have been eating avocados like they were about to go extinct. Grilled, mashed, cut in half and scooped out with a spoon, I love it all. But my absolute favorite find?

Avocado as dessert.

You heard me right, dessert. One of the richest, most decadent desserts I’ve ever had and ridiculously easy to make.

The dessert in question? Chocolate avocado mousse. I discovered it shortly after discovering my new favorite food blog, Vanilla Garlic. I was busy drooling all over his delicious recipes, his adorable dog and his way with words and a story when I stumbled across this recipe and knew I had to make it for a date night that evening. It has since turned into a staple, my go-to dessert.

It’s so easy to make that I have even made it over a brief lunch hour. You have no excuses not to make this and everyone will love you for it.

Last night I made this mousse for a dinner I’m having with a friend and his new girlfriend tomorrow night. The last time I made this mousse was at a potluck I hosted at my place. My friend Margot also brought dessert, angel food cake with strawberries and whipped cream (another personal favorite) and we all piled our desserts up on our plates. The combination? Was as awesome as you’d think it’d be. I’m still brainstorming ways to use this mousse in a cake and it’s going to be amazing.

I decided to use lady fingers, strawberries and mint from my garden to garnish this delicious dessert and it’s certainly has made a pretty presentation in my little yellow ramekins. I then may have taken some strawberries and scraped the bowl clean. I can’t help it–it’s just that good.

Have I mentioned that it’s vegan? This is the second vegan dessert that I’ve made and loved, there may be something to this!

Chocolate Avocado Mousse

Ingredients

  • 2 avocados, seeded and chopped, peels discarded
  • 1/3 cups cocoa powder
  • 1/3 cup agave syrup (more, if necessary)
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon cinnamon
  • Good pinch chipotle powder

Directions

Combine all the ingredients in a medium sized bowl, use a mixer to blend together until creamy and smooth. This serves about 3-4 people and trust me, it’s so rich you won’t need much!
